I am always trying to decide which icing technique is best, and my preference seems to change with my moods. I guess at the end of the day it depends on many things, like the cake flavour, the occasion, and the decorations. Anyway, these are usually my three main options:
The stylish cupcake: I like this technique because it is sleek and smooth and simple. Although it does make for a LOT of icing on one cupcake!
The pretty cupcake. This one is usually my favorite, it is classic and always looks nice.
The “au naturel” cupcake. I like this technique too, and it is very much in keeping with the organic, natural, “back to basics” food style that seems to be taking root at the moment.
