swiss meringue buttercream = delicious

When it comes to my favorite things, friends visiting from far away places is definitely right up there. Friends visiting and a baking day, well, that’s just the BEST. When my friend Claire came to visit the other day we decided to make swiss meringue buttercream (and chocolate cupcakes). Here is the recipe if you’d like to try it for yourself.



Recipe (makes enough for about 24 cupcakes) :

  • 5 egg whites – you can save the yolks and make creme brulee later :)
  • 1.25 cups sugar
  • 226g unsalted butter
  1. Put your mixing bowl over a pot of simmering water, and whisk the egg whites and sugar until the sugar has dissolved. The mixture should be hot to the touch.
  2. Remove the mixture from the stove, and carry on mixing on high speed until the mixture has cooled down (about 7 minutes).
  3. Add the butter one piece at a time, and beat until it the mixture is smooth.

Voila! You have swiss meringue buttercream.


Now all that’s left to do is ice your cupcakes and EAT them. Maybe with some earl grey tea. Delicious.
