Earl Grey Cupcake Recipe

These two items were a wedding gift from my aunt, and it was one of my favorites. The tea strainer belonged to my gran, isn’t that awesome? I love it.

Anyway, so all of this got me thinking, I haven’t shared my Earl Grey cupcake recipe with you guys yet! So here goes:

Earl Grey Cupcakes (makes 12)

Ingredients

  • 1 cup sugar
  • 115g butter (room temperature)
  • 2 eggs (room temperature)
  • 1.5 cups flour
  • 1 tsp baking powder
  • 3 earl grey tea bags
  • 1/2 cup of milk

Method

  1. Heat the milk, either on the stove or in the microwave, and add the tea bags. Let it stand to brew and cool for about half an hour.
  2. Set aside a 12 cup tray with cupcake liners.
  3. Preheat your oven to 180°C.
  4. Cream the butter and the sugar together for about 3 minutes with an electric mixer.
  5. Add the eggs, and mix well.
  6. Add half of the flour, and stir to combine.
  7. Then add the earl grey flavored milk.
  8. Add the other half of the flour and also the baking powder.
  9. Mix well, but don’t overbeat.
  10. Spoon the batter into the cupcake liners, so they are about 3/4 full.
  11. Bake for about 20 minutes, or until a cake tester comes out clean.
  12. Then ice them with vanilla or chocolate buttercream.

  11. Thank you for this recipe! I made them a few days ago, and my parents and siblings loved them. I even made my own frosting for them! (Out of desperation, actually, because we were all out of canned frosting, but I did it!) My little brothers made this baking experience the most fun. They don’t like tea, so every time they asked me what I was doing I said that I was making Surprise Cupcakes. They were definitely surprised when they found out that I made them with tea.     I just made these and they’re lovely! I added a splash of vanilla extract to the batter, then iced the cupcakes with a vanilla and milk frosting to make them london fog-esque.
