This is what I had ben looking, the original basic truffle recipe, bittersweet chocolate, cream and vanilla. Truffles are supposed to be creamy but have a bittersweet taste to them. I have made variations of this recipe, added cinnamon to the cream to give the truffles a cinnamon taste, poured the gauche into different bowls to flavor them, rum, brandy or other flavors. One method that I have tried and like a lot is to bring the cream to a slight boil, turn it off and let it cool, repeat, and on third time heating to a slight boil then remove and stir in a bag of 60% Ghirardelli. Put the bowls in the fridge to cool land roll the chocolate into balls. The brand of chocolate, as someone has stated, affects the taste, smoothness and sensation of the decant treat in your mouth, cheap is a blah doesn't taste good, good quality chocolate has a great feel and taste. Others are better than Ghirardelli, but I can't afford them.
